Creamy white bean, tomato and sage pasta

I eat beans straight out of the can, yes without rinsing even and no not the tomato sauce kind… I’ve done this since I was a little kid. I just love beans!!! My dad used to make these amazing bean and pasta dishes in winter and they were my favorite. Normally he make it all in one pot, today we are cooking the pasta separately but feel free to make this into a one pot dish, so you save some time cleaning up after. Today’s recipe is creamy, luscious, silky, rich and satisfying. Perfect for fall. The sage in this recipe really compliments the beans and tomatoes and make this into a hearty, filling recipe.

Apart from being super delicious, this recipe only requires a handful of ingredients that you probably already have in your pantry.

  • onions

  • garlic

  • sage

  • canned tomatoes

  • canned white beans

  • any kind of pasta

  • olive oil

  • salt and pepper

This is all you need. And allright maybe a touch of vegan parmesan if you like. but that’s totally optional.

You can totally swap out the white beans for any other kind of legume, they all work in this recipe.

You can also add in spinach, kale, broccoli, for an extra nutrients boost as well. I give you the staple recipe and feel free to add things and be creative with it.

This recipe serves 2-3 people

Ingredients

  • 1 can (400ml) of white beans, rinsed

  • 200-250 gr of dried, short pasta of choice

  • 400 ml of canned tomatoes

  • 5-7 fresh sage leaves

  • 1 white onion, chopped

  • 2 garlic cloves, minced

  • a splash of vegan cream (optional)

  • olive oil

  • salt and pepper

How to

  1. Start by heating up the olive oil and sauteé white onion and garlic until transluscant and fragrant.

  2. Add in the beans and sage, sauteé for another 5 minutes or so to let the flavors melt together.

  3. Meanwhile bring a pot of salted water to a boil for the pasta. Cook the pasta al dente, save some of the pasta water before draining.

  4. To the onions and beans add the canned tomatoes and break them up with a fork.

  5. Season with salt and pepper add a touch of cream, which is optional depending on how creamy you want the sauce.

  6. Leave to simmer for 10 minutes with a lid.

  7. Once done, taste and season again.

  8. Add the pasta to the sauce with a splash of pasta water if the sauce is to thick and serve.
