Rose and strawberry panna cotta

I saw these rose panna cotte “la Table de celine”and I just had to make them too! Ofcourse fully vegan made with a coconut and oat milk base, vanilla and rose extract, cause it’s not a rose panna cotta without rose flavour. To make the strawberry rose on top, which is actually harder than it looks, you have to thinly slice th strawberries and place them in a rose pattern. You can find tons of video’s for this online. I followed a video on pinterest. I’ll link it here.

Recipe

makes approx. 6 panna cotte

Ingredients

  • 240ml plantbased milk

  • 3 heaping tbs corn flour

  • 400 ml canned coconut milk

  • 3-4 tbs of sugar

  • 1 tsp of vanilla extract or 1 vanilla bean cut in half

  • 1 tsp of rose water/extract

  • pinch of salt

  • strawberries, cut into thin rounds

Instructions

  1. Start by heating up the coconut milk, sugar, vanilla, rose extract and salt in a sauce pan over medium heat.

  2. In a separate bowl whisk together the milk and corn flour.

  3. Once the sugar in the coconut milk has desolved and the mixture has come to a boil whisk in the corn flour milk mixture.

  4. Whisk continuously until the mixture becomes thick and creamy like a pudding.

  5. Pour it in your glasses of choice and leave to cool for 30 minutes.

  6. Cover with plastic wrap and place in the fridge to set for at least 6 hours or overnight.

  7. When you are ready to serve place the strawberry slices in a rose pattern on top of the panna cotte.
