For 10 pieces

Ingredients

  • 400 ml lemon juice

  • 1 lemon, the zest

  • 1 l water

  • 300 gr granulated sugar

  • 5 lemons

How to

  1. Mix together the lemon juice, zest, sugar and water.

  2. Pour this mixture into a leak-proof storage container and put in the freezer for at least 4 hours.

  3. Halve the lemons (cut them lengthwise) and remove the flesh with a spoon and knife. Place the peels in ice water to prevent discoloration until you are going to serve them.

  4. When you are ready to serve the sorbet remove it from the freezer, and put it frozen in a blender.

  5. Grind very finely until the mixture is white and looks like sorbet. You might need to scrape down the sides.

  6. Divide the sorbet among the halved lemons and serve.
