Celeriac steaks w/ salsa verde

Today we are making oven roasted celeriac steaks with a bright and fresh salsa verde.

Celeriac, an often overlooked root vegetable. But after you try these steaks, I bet you’ll want to have it every week! I also love how simple it actually is to make celeriac “steaks”. I cut the root into thick slices, drizzled them with a generous amount of olive oil and seasoned with salt, pepper and a pinch of ground nutmeg. The only thing left to do is roast them in the oven for 40 to 50 minutes, flip them half way and voila! They are ready! How easy is that right? I’m such a fan of these kind of recipes cause they are a real showstopper but you have to put minimal effort in. Win-win!!!

Salsa verde, I don’t know why but there is something about this sauce that elevates every vegetable. A while ago I shared these crispy cauliflower “cutlets” with salsa verde which is so good too! Salsa verde is also pretty easy to make, all you need is parsley, optional basil or other herbs, gherkins, garlic, white bread, olive oil and vinegar. It’s bright, zesty, herby and just perfect!

Now enough talking, cause you know you just want the recipe so here you go!

Recipe

Serves 2 people

Ingredients

  • 1 small celeriac, cut into 4 thick slices and peeled

  • olive oil, as much as needed

  • salt and pepper

  • a pinch of nutmeg

for the salsa verde:

  • a big handful of fresh flatleaf parsley

  • a big handful of fresh basil, or mint or any other green herb of choice

  • 1 garlic clove

  • olive oil

  • a slice of white bread, to make this gf swap w/ handful of raw cashew nuts

  • 2 gherkins, sliced

  • 1-2 tbs of apple cider vinegar

Instructions

  1. Start by preheating your oven to 180°C.

  2. Place the celeriac slices on a baking tray lined with baking paper and drizzle with a generous amount of olive oil.

  3. With your hands rub the olive oil allover the steaks.

  4. Season them with salt, pepper and nutmeg on all sides, again rubbing the spices into the steak with your hands.

  5. Roast the steak for 40 to 50 minutes, flipping them halfway, until golden and soft.

  6. Meanwhile make the salsa verde by adding all of the ingredients into a blender or mixer.

  7. Mix until you are left with a bright green, smooth sauce.

  8. Serve the salsa verde with the roasted steaks.

  9. Buon appetito!
